Last weekend, I decided at the spur of the moment to try my hand at making blueberry muffins. So I do what I normally do, I googled a recipe. After looking at a couple of mainly recipe blogs I decided to try the
recipe highlighted by the blogger
noobcook.
This blog has been a favourite of mine for a while now. Based in Singapore, the blogger calls herself a 'noobcook' but is far from it. Her dishes are relatively simple and easy to prepare. For those of you who are learning how to cook, do browse this blog for some simple recipes and give it a go.
Here are my five top tips when browsing recipe blogs:
1) Always go through the comments section. Read what the feedback from readers are especially those who have tried the recipe and provided their feedback. The feedback might help you in adjusting the recipe to suit your needs.
2) Oven temperatures are different for every oven. Get to know your oven and how fast it heats up. Some recipes might call for you to bake the muffins at 200C. However in your oven, 200C might be too high whereas 180C would be better. So try and adjust your oven settings accordingly.
3) When it comes to baking - try NOT to alter the recipe. Baking is a science. It is unlike cooking where you can afford to cut down on the chilli powder or increase the salt intake. In baking, cutting down the sugar or 'doubling the recipe' might not always yield the best results.
4) Always make note of how many persons does the recipe serve. Most bloggers will note if their recipe serves 2 or 4 and so forth. Do note how much the recipe serves before planning your meals.
5) Try not to skip ingredients. Although sometimes its ok. Many times certain recipes call for 1 or 2 ingredients which either I would not have heard of or I would not want to buy (cause I would not know what to do with the leftovers!). Try and google a substitute. Or if the amount required is minimal, try skipping it. Do bear in mind, no matter how minimal, all ingredients make a difference to a dish.
